Simple Strawberry Salmon Salad feels indulgent and yet is so very healthy and easy to make. Comes together in under 30 minutes making it a favorite for busy weeknights or packed work lunches. Also, this salad is a delicious and healthful option to reset after over indulging.
1/4cupextra virgin olive oil *plus extra for drizzling on salmon
1/4cupbalsamic vinegar
Salad
25 ounce salmon fillets*see Note #1 below
4-6cupsfavorite lettuce *see Note #2 below
12- 14strawberries *hulled & sliced
1/4cupred onion *thinly sliced into strips
1/4cupcrumbled feta
salt & pepper to taste

Preheat oven to 425℉.
Line a baking sheet with aluminum foil and place salmon fillet skin side down on foil. Drizzle with olive oil and sprinkle with salt & pepper or favorite seafood seasoning. See Note #3 below.
Bake for 8- 12 mins or until the meats easily flakes. Watch salmon carefully so as to not over cook. Let cool to room temperature before placing onto salad.
In a large mixing bowl whisk together oil and vinegar. Prepare all remaining ingredients and toss.

Recipe NotesNote #1- A standard salmon fillet typically ranges from 5 to 7 ounces, providing a satisfying portion for a single serving.Note #2- For this recipe I used a combination of romaine, arugula and red leaf lettuce. However, spinach, butter lettuce, baby kale or spring mix would all be delicious options. Note #3- Seasoning the salmon comes down to a personal preference as it tastes amazing with just a simple sprinkle of slat and pepper. However, here are a few seasoning ideas:
Lemon Pepper– A combination of lemon zest, black pepper, and finely minced parsley.
Dill and Parsley- Dried dill weed, finely minced Italian parsley and garlic powder makes for a savory and fresh addition.
Herbes de Provence– Rosemary, thyme, oregano and basil makes for a flavorful combination of herbs that adds a French touch.
Italian Seasoning– Oregano, basil, garlic powder and parsley not only adds a delicious Italian twist, it also pairs well with other ingredients such as tomatoes, olives and mozzarella.
Greek– Oregano, mint, lemon zest and black pepper adds a unique flavor profile that is both savory and refreshing.
Aim for 1-2 teaspoons total for the 10 ounces of salmon.
